- 2 Tbsp. coconut oil (or olive oil)
- 1 onion (– chopped)
- 6 garlic cloves (– chopped)
- 1 Tbsp. turmeric
- 1 Tbsp. ground cumin
- 1 Tbsp. salt (or more – to taste, I used pink Himalayan)
- 1 Tbsp. ground mustard
- 1 Tbsp. ground coriander
- 1 Tbsp. ground pepper
- 1 Tbsp. fenugreek (ground, optional)
- 1/4 tsp. asafoetida
- 15 oz. coconut milk (I used lite)
- 6 Tbsp. minced ginger
- 1 cup cilantro
- 5 turnips (small, – diced)
- 5 golden beets (small, – diced)
- 1 large sweet potato (– diced)
- 5 oz. baby kale
- 1 tomato (– diced)
- 6 cups water
- 2 cups basmati (or other long grain white rice)
- 1 tsp. cumin seeds
- 6 green cardamom pods
