  • 4 eggs
  • 1 tablespoon milk
  • salt and ground black pepper
  • 1 tablespoon vegetable oil
  • 1 scallion (minced)
  • 1/2 avocado (cubed)
  • 50 grams feta cheese

    Directions

    1. Whisk the eggs, milk, and salt and pepper together.
    2. Heat the oil in a skillet and saute the scallion. When it starts to brown, pour in the egg mixture and cook at medium-low heat.
    3. When the edges start to brown, add the avocado and cook for 2 more minutes. Add the feta, cover the skillet and let cook 4-5 minutes more, until the egg is cooked through. Serve.
