Good egg salad great way to get rid of leftover eggs and avocados you got laying around. It's a quick and easy meal.

My family and I had avocados sitting out on the counter and so decided to try this. It was very good. We made the egg salad as we usually do: six to seven eggs, salt, pepper, and I think mustard and mayo. Then we added half an avocado to the mix and put it all on whole wheat bread. It was just like our regular egg salad (which is delicious), but added that wonderful avocado taste and feel. I would like to try it the way this recipe calls for, but either way, I recommend this for a healthy lunch. :)
