- 1 avocado (large, chopped into bite sized pieces, not too small, else you might end up mashing them when you mix it with the tomatoes and onions)
- 2 Tbsp. sun-dried tomatoes (chopped, bottled in oil)
- 1 Tbsp. red onion (finely chopped)
- 1 tsp. chopped fresh cilantro (/coriander)
- 1 pinch salt
- 3 egg roll wrappers
- water (or beaten egg for brushing)
- vegetable oil (for frying)
- 1/4 cup cashews
- 2/3 cup chopped fresh cilantro (coriander)
- 2 cloves garlic
- 1 inch ginger (piece)
- 2 green onions (chopped)
- 1 Tbsp. sugar
- 1 tsp. ground black pepper (freshly)
- 1 tsp. cumin
- 4 tsp. white vinegar
- 1 tsp. balsamic vinegar
- 1/2 tsp. tamarind pulp (can be found in Asian stores)
- 1/2 cup honey
- saffron (pinch ground, it's ok to leave it out if you have too much trouble finding it)
- 1/4 cup olive oil
- green chillies (You can add, to the filling to make it spicy. Also pine nuts to the filling is a fun addition!, optional)
