- 300 grams squash (Harlequin, or other squash of your choosing peeled and cut into rough cubes of about 1.5 inches)
- 2 1/2 Tbsp. olive oil
- 1 handful thyme sprigs (fresh)
- 1 large carrot (140g peeled and roughly chopped)
- 1 onion (large, 180g chopped)
- 2 cloves garlic (minced)
- 1/2 tsp. turmeric
- 1 tsp. ground cumin
- 1/2 tsp. ground coriander
- 500 mL vegetable stock
- 1 tsp. sea salt
- 1 tsp. cracked black pepper

Excellent recipe for creamy soup without cream. I used homemade bone broth, roasted garlic, and added bouillon. I also used buttercup squash and regular pumpkin. Really good.

7.5/10 Pretty good, I thought it needed to be mellowed out and added cream and a little brown sugar.

I used acorn as my other squash and used much more garlic and added a few pinches of brown sugar as well. SO GOOD ☺️

Made it with frozen squash. I don't recommend that. Excited to try it with fresh!

I used homemade rotisserie chicken stock and slightly over reduced the stock on the stove but overall it came out really good! Didn’t realize how much extra spice was at the bottom of my stock so I over spiced it but still tasty. Worth making! Topped mine with some roasted pepitas for texture as I’m not much of a soup person to begin with. Will add some hemp hearts to the next one.

Delicious! I added ginger, lemongrass, cinnamon, nutmeg, and curry for extra flavor. Loved it!

This was the first time I've made any kind of quash soup. It was very good. I added bacon and celery. Not too sweet and the spices were nice and fragrant.

Great. I don't like coriander very much, so I did not use it. I only made a small amount this time, but plan to make a large container next time and freeze some.
