- 1 lb. chicken tenders (Foster Farms Simply Raised Fresh Boneless Skinless, or Breasts, cut into cubes)
- salt
- pepper
- 1/2 tsp. dried thyme
- 2 tsp. canela (divided)
- 1 Tbsp. butter
- 6 cloves garlic (minced)
- 1 yellow onion (large, chopped)
- 16 oz. brussels sprouts (trimmed and cut into quarters)
- 2 sweet potatoes (medium, peeled and cut into small cubes)
- 4 apples (I used Fuji and Pink Crisp as they were what was available, peeled, cored and chopped into cubes)
- 1 cup low sodium chicken broth (start with less, add more as needed)
- 1 lemon
- 3 tsp. fresh thyme

Very good. It's a very nice blend of autumn flavors. I made it in a Dutch oven. It was very moist. I have made it twice and I am planning on making it for a crowd next. It is not difficult but you need a little time to prep.
