This rich and earthy flavored vegetarian soup, known in Thailand as Kaeng Hed, is made with a delicious medley of fresh mushrooms, bamboo shoots, and sweet red chili. The broth gets it's distinctly Thai flavor from lemongrass, galangal, kaffir lime, and tamarind.
