- 1/2 lb. salt pork (diced into ¼" pieces*)
- 1/4 cup water
- 2 Tbsp. butter
- 2 celery (large ribs, thinly sliced, 1/8")
- 1 onion (large, small diced, 1/4")
- 1 clove garlic (small to medium-sized, minced)
- 1 1/2 cups chicken broth
- 3 cups milk
- 2 1/2 lb. russet potatoes (peeled and diced into ½" cubes)
- 1 bay leaf (large)
- 1/2 tsp. dried thyme
- 3 Tbsp. cornstarch
- 3 Tbsp. cold water
- 20 oz. clams (baby, drain ONE can of the juice, add juice from second can *see note for using fresh hard-shell clams)
- 2 cups heavy cream
- 1/2 tsp. white pepper
- 1 tsp. table salt (regular, or to taste)
- fresh parsley (chopped, to garnish bowls, optional)
- oyster crackers (serve with, if desired)

The recipe turned out FANTASTIC! I had been trying to find a recipe that mimicked the crockpot recipe I used years ago that was so good! Although I did find a crockpot recipe that used your same ingredients, I thought why take four hours to make something that only needs an hour to cook!
I had 12 ounces of salt pork and my can of minced clams was 51 ounces. (I don't think you can have too many clams!) I used a little extra slurry since I had almost 4 cups of clam juice which (was not salty). I had bought half-and-half for this recipe and just added some extra whipping cream to brighten up the flavors.
Also, thank you for not requesting that we add the clams with the potatoes as they cook! 😲 Great recipe. Thanks.
