- 1 Tbsp. vanilla (I prefer to use one Tahitian Vanilla Bean, but that’s optional)
- 1 tsp. almond extract
- 1/4 tsp. ground nutmeg (freshly, On St. Croix we are lucky to have access to freshly picked nutmeg from the island of Dominica/St. Lucia)
- 1/2 tsp. fine sea salt
- 1 cup unsalted butter
- 1 cup milk (divided into 3/4 and 1/4 cups)
- 6 egg yolks
