modified recipe as didn't have all ingredients. added shredded leeks to make up shortfall of spring onions.. water instead of mirin... but added sherry cap full and a half to the sauce.. skipped stage 5... still turned out creamy and flavourful. . will be making again.

It turned out well. Tried to understand the cut it uppermost bit but figured it out in the end
