- 1 Tbsp. curry powder (I used a green curry powder)
- 2 cloves garlic (crushed)
- 1 tsp. ginger (freshly grated)
- 1 stick lemongrass (ground up)
- 2 Tbsp. tomato paste
- 2/3 cup light coconut milk (5 syns)
- 1 1/2 cups chicken stock
- coconut oil spray
- salt
- black pepper
- coriander (freshly chopped, to serve)
