- 4 Tbsp. shaoxing (cooking rice wine)
- 4 Tbsp. light soy sauce
- 1 Tbsp. dark soy sauce
- 1 Tbsp. rice vinegar
- 1 Tbsp. chilli (crispy, in oil, ideally with peanuts or chilli oil, chilli paste)
- 2 tsp. sugar (or to taste)
- 1 tsp. Sichuan pepper
