- 8 aubergines (baby)
- 3 Tbsp. oil
- 1 tsp. mustard seeds
- 1/2 tsp. seeds (onion)
- 1/4 tsp. fennel seeds
- 6 fresh curry leaves
- 1 onion (medium/large, diced)
- 3 cloves garlic (crushed with 1 tbsp water)
- 1/2 inch ginger (crushed with 1 tbsp water)
- 2 green chillies (crushed with 1 tbsp water)
- 1 tsp. cumin powder
- 1 1/2 tsp. coriander powder
- 1/2 tsp. paprika powder
- 1/2 tsp. red chili powder
- 1/4 tsp. turmeric powder
- 1/2 tsp. curry powder
- 1/4 tsp. garam masala powder
- 1 tsp. sugar
