- 1 bunch spring onions (/scallions, approx 10, cut into 1 inch pieces)
- 1 1/2 tsp. fine sea salt
- 3 cloves garlic (thinly sliced)
- 2 tsp. raw sugar (unrefined)
- 2 tsp. ginger (finely grated)
- 1 Tbsp. toasted sesame seeds
- 1 Tbsp. rice vinegar
- 1 1/2 tsp. chilli flakes
