  • 1 red pepper (seeded and chopped into big pieces)
  • 1 lime (juiced)
  • 2 tablespoons agave nectar

    So delicious! I will be making this again, my whole family really enjoyed it. I did have to modify the recipe a little, I didn't add any salt when I massaged the kale and unfortunately didn't have any cabbage on hand. I'm really looking forward to eating the leftovers tomorrow, and I think it'll be even more delicious as the kale will have wilted a bit more and absorbed more of the dressing! Yum!

    This was fantastic. I made this with a lot more kale than noted here. Enough for 4-5 servings. but kept all the other ingredients about the same. I used the recipe as a way to use up a giant bag of kale my wife bought. My 14-year old son smelled it while I was mixing it together and was like, "That smells like quacamole!" I gave him a taste and he demanded a full bowl as a pre-bedtime snack. I made it a day ahead of when we needed it which helped the flavors mix and helped break down the kale and cabbage so it wasn't so tough.
