- 1/4 tsp. toasted sesame oil (which isn’t raw, but tastes good!, optional)
- 5 kale (big stalks of)
- sea salt
- salad dressing (Raw red pepper and ginger, see recipe above)
- 1/2 avocado (cubed)
- 1 carrot (peeled and sliced into strips with a vegetable peeler)
- 3 Tbsp. cabbage (purple, chopped)
- 1 Tbsp. cilantro (roughly chopped)
- 1 Tbsp. red onion (thinly sliced)
- 1 tsp. sesame seeds

Why are the calories so high? Delicious and I think healthy salad but this is about my whole day’s calorie allotment while I’m reducing.

This was fantastic. I made this with a lot more kale than noted here. Enough for 4-5 servings. but kept all the other ingredients about the same. I used the recipe as a way to use up a giant bag of kale my wife bought. My 14-year old son smelled it while I was mixing it together and was like, "That smells like quacamole!" I gave him a taste and he demanded a full bowl as a pre-bedtime snack. I made it a day ahead of when we needed it which helped the flavors mix and helped break down the kale and cabbage so it wasn't so tough.
