- 1/3 cup panko breadcrumbs (or gluten free breadcrumbs)
- 2 Tbsp. asian fish sauce
- 3 shallots (small, finely chopped)
- 3 garlic cloves (minced)
- 1 stalk lemongrass (fresh, roughly 4" pieces, tender white inner bulb only, finely minced)
- 3 Tbsp. chopped cilantro (plus 1/3 cup leaves for serving)
- 1 Tbsp. chopped fresh mint (finely, plus 1/3 cup leaves for serving)
- 1 1/2 tsp. cornstarch (or arrowroot powder)
- 1/2 tsp. kosher salt
- 1/2 tsp. freshly ground pepper
- 1/2 cup coconut sugar (raw granulated)
- 1 egg whites (from large egg)
- 1 head Boston lettuce (or red leaf lettuce, leaves separated)
- 1 seedless cucumber (small, peeled, halved lengthwise and thinly sliced crosswise)
- 1 red onion (small, halved and thinly sliced)
- 2 Tbsp. fresh lime juice
- 1/2 Tbsp. rice wine vinegar
- 1 1/2 Tbsp. coconut sugar (raw)
- 1/3 cup water
- 1 1/2 Tbsp. fish sauce (most are gluten-free, but check to label to make certain)
- 1 serrano chile (small, sliced into thin rings)
- 1 clove garlic (smashed with the blunt side of your knife, then minced)
