- 2 stalks lemongrass (greens removed and stalks chopped to 1 inch pieces)
- 1 handful kaffir lime leaves
- 2 inches galangal (chunk of, root, lightly smashed)
- 3 cloves garlic
- 1 small onion (chopped into chunks)
- 6 shiitake mushrooms (fresh or dehydrated, thinly sliced)
- 3 whole black peppercorns
- 1/2 tsp. salt
- 2 Tbsp. soy sauce
- 2 Tbsp. rice wine vinegar
- 1 pinch sugar
- 1/2 Tbsp. garlic paste (chilli, more to taste)
- 1 cup white button mushrooms (thinly sliced + 6 more mushrooms, sliced and sautéed, kept aside)
- 1 carrot (medium sized, peeled and cut into matchsticks)
- 1 baby bok choy (stems, chopped into 1 inch chunks and leaves)
- 3 sprigs fresh coriander
