- 3 Tbsp. soy sauce (low-sodium)
- 2 Tbsp. oyster sauce
- 2 Tbsp. dry white wine (I used sake since I didn’t have an open bottle of white wine)
- 1 tsp. ginger (grated)
- 1 tsp. sugar
- 2 tsp. corn starch
- 4 stalks green onion (chopped)
- freshly ground black pepper (to taste)
- 1 lb. ground turkey (ground chicken is a good substitute)
- 1 oz. dried shitake mushrooms (soaked in warm water for 30 minutes and sliced into strips)
- 1/4 cup water chestnuts (chopped)
- 3 cloves garlic (minced)
- 1/2 onion (small, chopped)
- 1 red bell pepper (medium-sized, diced)
- 1/2 cup shredded carrots (divided in half)
- 2 Tbsp. cooking oil
- 20 iceberg (large, or bibb lettuce leaves)
- cilantro leaves (for garnish, optional)
- 7 Tbsp. hoisin sauce
- 2 Tbsp. ponzu sauce (Japanese, optional, for flavor and to help thin out the sauce)
- 1 tsp. Sriracha chili sauce (or more, to taste)

I was looking for something similar to the way they serve bulgogi in Korean restaurants, and this is a nice substitute... and so much faster to make! A few notes... this recipe pairs well with rice, so if you don't automatically make rice with every meal, remember to start rinsing and boiling your rice before you start on the meat mixture. I sub'd finely chopped baby Bella's for the shiitake mushrooms, but didn't soak them, and they added some "meat" to the turkey mixture. I also didn't do water chestnuts, but if you love them, crunch away! Anyway, great recipe. Thanks!
