- 3/4 head iceberg lettuce (washed and chopped)
- 1 cucumber (medium, diced)
- 1/3 cup cilantro (minced)
- 1 carrot (julienned)
- 2 Tbsp. toasted peanuts
- 2 scallions (white section sliced and green section minced)
- 1 Tbsp. olive oil
- 2 Tbsp. orange juice
- 1 Tbsp. white vinegar
- 1 tsp. ginger (grated)
- 1 tsp. soy sauce
- salt and ground black pepper

Directions
- Whisk together the olive oil, orange juice, vinegar, ginger, soy sauce, salt, and pepper. Set aside.
- Place the lettuce, cucumber, cilantro, carrot, and the white section of the scallions into a bowl and toss. Add the dressing and mix to coat the salad evenly.
- Place each half of the salad onto a serving dish and sprinkle with peanuts and the green section of the scallions.
