Super easy - I used 1 pound of brussels spouts and shredded them in the food processor. I also used the rest (3 cups) of chopped spinach. I caramelized 1/2 a red and 1/2 a yellow bell pepper in coconut aminos. I sliced a cucumber and spiralized that atop the salad, as well as 1 chopped green onion. I used "Lite House" Ginger dressing. Everyone loved it.
