- 1/2 cup carrots (peeled and sliced into matchsticks, I use bagged store bought shredded carrots)
- 4 scallions (green onions, thinly sliced)
- 1/4 cup cilantro (chopped)
- 3 Tbsp. mint (chopped)
- 1 Tbsp. sesame seeds
- 1/4 cup oil (any mild or olive oil)
- 1/4 cup creamy peanut butter
- 3 Tbsp. Tahini
- 1/2 cup soy sauce (you can use tamari for GF)
- 1/4 cup rice vinegar
- 1/4 cup honey
- 1 Tbsp. sesame oil
- 1 Tbsp. fish sauce
