- 1/2 cup chopped fresh cilantro
- 3 Tbsp. creamy peanut butter
- 3 Tbsp. rice vinegar (unseasoned)
- 1 Tbsp. fresh lime juice (from one lime)
- 3 Tbsp. vegetable oil
- 1 Tbsp. soy sauce (use gluten-free if needed)
- 3 Tbsp. honey
- 1 Tbsp. sugar
- 1 clove garlic (roughly chopped)
- 1 inch fresh ginger (square piece, peeled and roughly chopped)

- 1/2 tsp. Sriracha

Nice blend of flavors, I also massaged the kale with salt before to reduce bitterness

Really good! Made it as an entrée and added baked tofu on top. I only used 2 Tbsp veg oil in the sauce and next time will taste it before adding the 1 Tbsp sugar, as it was pretty sweet - but the sauce had a wonderful depth of flavor overall.

Once upon a chef has fabulous recipes and this is one of my favorites. Great dressing, nice and crisp. Made it for my sister and her family and they loved it (even my picky niece). The dressing helps take it over the top
