- 3.5 oz. bean thread noodles (also known as glass or cellophane noodles)
- 2 cups turkey meat (shredded)
- 1/4 cup fresh cilantro
- lime slices (to garnish, optional)
- 1 turkey carcass (cooked, about 4 pounds, turkey meat mostly removed)
- 2 large onions (cut into quarters)
- 4 celery stalks (cut into quarters)
- 4 large carrots (cut into quarters)
- 1 tsp. whole black peppercorns
- 1 bunch fresh cilantro (stems included)
- 1 Tbsp. sesame oil
- 2 garlic cloves (minced)
- 1 Tbsp. fresh ginger (grated)
- 4 cups low sodium chicken broth
- 2 cups water
- 2 Tbsp. miso paste (white or yellow)
- 1 tsp. sambal oelek (optional for heat)
- 1 1/2 cups shiitake mushrooms (sliced thin)
- 4 baby bok choy (stalks, halved lengthwise)
- 3 green onions (sliced)
- 16 oz. potstickers (package frozen, wontons)
