- 24 oz. black cod (or other white flesh fish, tilapia, halibut, mahi mahi, sea bass)

Fabulous. Easy to make. We're snowed in so had to improvise. I didn't have any red curry paste so I used mild curry powder, also diced a fresh hot pepper as had no flakes and substituted fish sauce with soy sauce and lea and perrins with lime juice (Note: But only used equivalent of 1/8th cup). Used wholemeal fettucine. A very more-ish dish

I made this yesterday. I will never buy bottled peanut sauce again! I didn’t have pad Thai or fettuccine, but loads of fine rice noodles which worked just fine. I am unsure whether the method for cooking the fish was ideal - might bake it next time. It made such a mess on my cooktop. The drizzles for the fish was also yummy. I upped the veg for the meal by serving steamed broccoli on the side overall a yummy recipe.
