- 2 bunches curly kale (stems removed, leaves sliced thin)
- 1/2 head green cabbage (small, very thinly sliced)
- 1/4 head red cabbage (small, very thinly sliced)
- 3 carrots (julienned)
- 1/4 red onion (very thinly sliced)
- 1 bunch scallions (thinly sliced)
- 1/2 bunch cilantro (finely chopped – believe it or not, I use the entire bunch)
- 3 chicken breasts (roasted, removed from bone and chopped or sliced thin)
- salt (to season the chicken)
- pepper (to season the chicken)
- 1/2 cup salted peanuts
- 1 Tbsp. peanut butter (heaping,)
- 3 Tbsp. soy sauce
- 1/4 cup rice wine vinegar
- 1 tsp. sesame oil
- 2 Tbsp. ginger (freshly grated, do not substitute dried Ginger)
- 3 Tbsp. honey (more or less to taste)
- 1 tsp. salt
- 1/2 tsp. pepper
- 1/2 tsp. Sriracha (scant, Thai Hot Sauce aka “rooster sauce” or to taste)
- grapeseed oil (or other neutral flavored)

My husband loved the salad and dressing. I added Ramen noodles and we had our chicken on the side. We had left over dressing and have used it in other dishes; it’s that good.

Great!!! I LOVE the dressing! The sriracha sauce and ginger gave it a great kick! I did not include the chicken in my recipe. I doubled it but did not purchase enough kale... But over all I am enjoying it for my lunch!
