- 3 cups shredded lettuce (or slaw, I used raw grated brussel sprouts)
- 1/2 cup whole almonds (chopped)
- 2 cups shredded carrots
- 1/4 cup chopped cilantro
- 2 cups edamame (cooked, shelled)
- toasted sesame seeds (optional)
- 2 chicken breasts
- 1/2 cup soy sauce
- 2 cloves garlic (minced)
- 1 piece minced ginger (about 1 tbs. for me)
- 2 Tbsp. sugar
- 2 Tbsp. seasoning (5 spice, can also sub other seasoning – I used part Garam Masala and part Cajun seasoning)
- 2 cups chow mein noodles (dry crunchy kind)

Excellent recipe!! I cooked egg noodles instead and sautéed the veggies and added the chicken and sauce. Absolutely delicious!!! Will be making again 😁

Excellent! The only changes I made was I used a mix of baby lettuces and Trader Joe’s Gourmet Fried Onion Pieces (because I didn’t have the noodles.) I’d definitely make this again.

The dressing was very thick and overall not as refreshing as I hoped it'd be. Maybe with an oil dressing it would be better.

This salad turned out great! I got lucky by finding a pre packed Asian salad kit and only needed to chop the cilantro, unshell the edamame and cook the chicken. My salad skeptical husband raved about it! Great recipe!
