I'm not sure if I'd make this again. I didn't taste much Asiago except for the cheese I used for garnish. I think the recipe does not need 3 cups of carrots, as it makes the soup sweet enough to cover up cheese flavor. I'd reduce the carrots to one cup, and up the asiago to at least three cups in addition to the extra for garnish.
