- 500 grams fish fillets (2 pieces 1-inch thick, washed and set aside)
- 80 grams tamarind pulp
- 2 stalks lemongrass (white part only - bruised slightly)
- 10 ladyfingers (young, keep whole if small and cut half if it is long)
- 1 tomatoes (cut into sections)
- 1 brinjal (eggplant, small - cut into quarters horizontally)
- 50 grams vegetables (salted, optional, cut into1 inch pieces)
- 1/2 cup oil (for frying)
- 1/2 tsp. powdered turmeric
- salt (to taste)
- sugar (to taste)
- 14 chillies (dried, cut each dried chili into 3 sections and boil in a small pot of water till softened. Discard water)
- 3 red onion (large, OR 15 small shallots – peeled and roughly cut)
- 5 garlic cloves (peeled and roughly chopped)
- 10 grams belacan (shrimp paste - lightly toasted)
