Cheese dissolved and made the salad look creamy white rather than colorful . Tasted better than it looked

I'm not usually a fan of Arugula salads (hubby is though), but this was amazing!!! The goat cheese really balances the peppery nature of the arugula, and the tomatoes and lemon juice both add such a nice touch of acid. Truly, this is now my go-to arugula salad!

Planning on making this tomorrow but will substitute feta for goat cheese. I think it will work just as well.

I've also used spanich for this and red wine vinegar works too. It's easy to roast the corn on the grill then cut it off the cob.
