From Crock Pot, absolutely amazing. Can be used as a side dish or an actual meal.
Ingredients

8 SERVINGS
- 4 cups vegetable broth
- 2 cups brown rice (or white)
- 5 oz. frozen chopped spinach (1/2 10 ounce package, thawed and drained, we personally like to use the whole package of spinach)
- 1 green bell pepper (cored, seeded and chopped)
- 1 red bell pepper (cored, seeded and chopped, optional)
- 1 tomato (medium ripe, sliced into wedges or cubbed)
- 1 yellow onion (medium, chopped)
- 1 medium carrot (peeled and diced)
- 3 cloves minced garlic
- 1 Tbsp. parsley (fresh minced)
- 1 tsp. salt (can add more to taste)
- 1/2 tsp. black pepper (can add more to taste)
- 13.75 oz. artichoke hearts (quartered, rinsed and drained)
- 1/2 cup frozen peas (optinal)

Directions
- Combine broth, rice, spinach, bell pepper, tomato, onion, carrot, garlic, parsley, salt and pepper in a crock pot.
- cover and cook for 4 hours on low or 2 hours on high
- when about half way done cooking add the artichokes and peas then complete cooking.
