- 1/4 cup green bell pepper (finely minced)
- 1 pinch saffron threads (about 1/4 teaspoon)
- 6 cloves garlic (pressed through garlic press)
- 14.5 oz. petite cut diced tomatoes (drained very well of juices)
- 1 Tbsp. tomato paste
- 1 1/2 cups long-grain white rice
- 2 bay leaves
- 1/2 cup white wine (sauvignon blanc is a fine pick)
- 3 cups chicken broth (warm)
- 1/2 cup peas
- 2 Tbsp. green olives (small, Spanish style, halved)
- 1 Tbsp. chopped parsley

Quite tasty. Not spicy at all, more a warm earthiness; would have benefited from a touch of heat. I used split breasts and did not adjust cooking time, they were still quite moist.
