- 16 oz. tomatoes (whole, crushed.)
- 15 oz. black beans (rinsed and drained)
- 1 1/2 cups long grain rice
- 1 onion (chopped)
- 1 cup cottage cheese
- 4 oz. green chillies (chopped)
- 2 minced garlic (tablesppoons)
- 2 cups jack cheese (grated monteray)

Directions
- combine tomatoes, beans, rice, onion, cottage cheese, chilies, oil, garlic and 1 cup of Monterey jack cheese in crock pot.
- Mix together thoroughly.
- cover and cook on low 6 to 9 hours.
- Sprinkle with cheese and serve.
