- 1 stick unsalted butter (cold, diced)
- 1 large egg
- 1/3 cup ice water
- 1 Tbsp. distilled white vinegar
- 1/2 lb. lean ground beef
- 1 Tbsp. smoked paprika
- 1 Tbsp. ground cumin
- 1/2 red bell pepper (seeded and diced)
- 1 Tbsp. parsley (chopped finely)
- 1/2 onion (large, finely chopped)
- 1 Tbsp. capers (finely chopped)
- olive oil
- 1 hard-boiled egg (roughly chopped)
- 1 cup canned tomatoes (chopped, we used San Marzano)
- salt
- pepper
- 1 egg (gently beaten with a fork, for the egg wash)
