An Indian inspired rice dish featuring saffron and other fresh herbs. Made with basmati rice, this dish includes plump golden raisins for a burst of sweetness and sliced almonds for additional crunch.

Ingredients

  • water (triple the amount of the rice)
  • 1/2 cup olive oil
  • 1 onion (medium)
  • 3 garlic cloves (minced)
  • 2 bay leaves (laurel)
  • 500 grams basmati rice
  • salt (to taste)
  • 1 tablespoon saffron
  • 75 grams flaked almonds
  • 100 grams golden raisins

    Directions

    1. Bring water to a boil.
    2. In a large pan, heat olive oil, onion, garlic, and bay leaves.
    3. When the onion begins to brown (keep stirring so that the garlic doesn't burn), add the rice, salt, and saffron. Mix everything, and let the rice fry for 2 to 3 minutes, stirring from time to time.
