  • 1/2 cup self rising flour
  • 4 tablespoons butter (chilled, chopped)
  • 1/2 cup dried apricots (chopped)
  • 1/3 cup granulated sugar
  • 1/4 cup macadamia nuts (chopped)
  • 1/2 cup milk
  • 1 egg
  • 1/2 cup apricot jam (plus extra jam to serve)
  • heavy cream (to serve)

    Directions

    1. Preheat oven to 425°F. Lightly grease a baking tray.
    2. Sift flour into a large bowl. Cut in butter until mixture resembles coarse breadcrumbs. Add apricots, sugar and nuts. Mix in milk and eggs until just combined. Turn out onto a lightly floured surface and knead lightly. Press into a rectangle about 3/4 inch thick. Spread jam over top then roll up tightly from long side. Cut into 9 slices. Arrange on prepared tray. Bake for 12-15 mins, or until golden brown. Let cool on a wire rack.
