- 45 grams caster sugar
- 50 grams butter (softened)
- 60 grams milk (warm)
- 1/2 tsp. salt
- 1 egg
- 350 grams all purpose flour
- 2 Tbsp. butter (softened)
- 60 grams apricot jam
- 25 grams dried cranberries (soak in warm water and pat dry, my addition)
- 1 tsp. ground cinnamon (mix with 20g sugar in a small bowl and set aside.)
- sliced almonds (for top, optional)
- 200 grams icing (powdered sugar)
- 1 Tbsp. lemon juice
