- 500 grams flour
- 1 pinch sugar
- 250 grams butter
- 1 qt. water
- 200 grams apricots (fresh)
- 2 egg yolks
- 20 cream (cl .semi-thick)
- 25 grams caster sugar
- 3 Tbsp. dark brown sugar
- blanched almonds

Directions
- Pastry Preparation:
- Pour flour and sugar in a bowl, and stir.
- Add the diced butter, knead by hand, while gradually adding the water to form a dough ball. Separate into two balls.
