- 750 grams chicken thighs
- 75 grams apricots (ready to use)
- 200 mL orange juice
- 1 Tbsp. balsamic vinegar
- 1 Tbsp. soya sauce
- 1 tsp. ground cinnamon
- 1 tsp. mixed spice (ground)
- 1 tsp. English mustard
- 1 Tbsp. olive oil
- black pepper
- salt

Directions
- 1. Place chicken into a large bowl season with salt, pepper, cinnamon and ground mixed spices.
- 2. In a small pot simmer the apricots in the orange juice, until tender.
- 3. Add vinegar, soya sauce and English mustard. Simmer for 2-3 minutes.Cool the mixture and liquidise it in a blender.
