very quick and easy. great for end of apricot season. added some cornstarch to thicken up the sauce. very tasty!

Not only was this dish absolutely delicious, but it was quick & easy. We did not have fresh apricots, so we used 12-13 dried apricots (which we soaked in the chicken stock as suggested) & about 1/3 cup of chicken stock and puréed it. We used 3 heaping teaspoons apricot preserves vs jam as we love apricots. This chicken dish was served on couscous and we topped it off with a few small dried apricots. Yummmm!!!!!!
