  • 3 1/2 pounds chicken parts
  • 1/2 cup flour (seasoned)
  • 2 tablespoons oil
  • 1 onion (large, sliced)
  • 1/2 cup apricots halved (dried)
  • 3 cups apricot nectar
  • 1 onion soup mix
  • steamed rice (to serve)

    Directions

    1. Preheat the oven to 350°F.
    2. Toss chicken pieces in flour, shaking off excess. Heat oil in a large skillet on high heat. Cook chicken in 2 batches for 3-4 mins each side, until browned. Transfer to a large baking dish. Sprinkle with onion and apricots.
    3. Combine apricot nectar and soup mix. Pour over chicken mixture.
    4. Bake, covered, for 40 mins. Uncover and bake for 10 mins, until the chicken is cooked through. Serve with steamed rice.
