  • 2/3 cup honey
  • 2 large eggs
  • 1/3 cup coconut oil (melted & cooled)
  • 1 1/2 teaspoons pure vanilla extract
  • 1 1/2 cups white whole wheat flour
  • 1/4 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 2 teaspoons cinnamon
  • 1/2 teaspoon allspice
  • 1/4 teaspoon nutmeg
  • 1/2 teaspoon kosher salt
  • 1/2 cup old-fashioned rolled oats
  • 1/2 cup raisins (optional mix-ins: chopped walnuts, dried cranberries, blueberries, etc., I kept it simple and left them out, but feel free to add if you like)
  • 1 1/2 tablespoons coarse sugar (such as raw, turbinado sugar or sparkling sugar, for sprinkling on top, optional)

    Oh man, do I love this recipe! I make banana bread all the time but I needed a recipe that would use up the applesauce that I bought that my kids don’t eat. The spices in this recipe really put it over the top! I also added some wheat germ for nutrition and I used a total of five eggs with the recipe doubled to compensate for that dryness. In my doubled recipe I used one cup of whole wheat flour and 2 cups of white flour just because usually when I make wheat flour muffins they turn out too dry. I also added blueberries and chia seeds to the “adult” muffins and left them out of the kids’ muffins. Everyone loves them! Thank you so much—it’s a keeper!
