- 1 apple (large, cored and sliced very thin, try Envy, Gala, Fuji, or similar)
- 1 cup white cheddar (grated aged)
- 1/2 cup cranberries (dried orange-flavored, I use Trader Joe's; plain dried cranberries may be substituted)
- 1/2 cup sliced almonds (Fisher Natural)
- 1/4 cup olive oil
- 1/4 cup honey
- 1/4 cup apple cider vinegar
- 2 tsp. mustard (I like either dijon or honey mustard)
- 3/4 tsp. salt (or to taste)
- 3/4 tsp. black pepper (or to taste)
