  • 1 cup granulated sugar
  • 1 cup heavy cream (or milk)
  • 1/4 cup vegetable oil
  • 3 teaspoons vanilla extract
  • 2 1/4 cups all-purpose flour (sifted)
  • 2 teaspoons baking soda (sifted)
  • 1 apple (cored, peeled, thinly sliced)
  • 3 1/2 ounces raspberries
  • 1 tablespoon sliced almonds
  • powdered sugar (for dusting)

    Directions

    1. Preheat oven to 350°F. Line a 12-cup muffin pan with paper liners.
    2. Combine sugar, cream, oil and vanilla. Fold in sifted flour and baking soda. Distribute between paper liners. Top with sliced apple, raspberries and almonds. Bake for 25-30 mins, until a skewer inserted in the center comes out clean.
    3. Serve cupcakes dusted with powdered sugar.
