  • 1/2 cup granulated sugar (+ 1 tbsp)
  • 3/4 cup whole almonds
  • 5 1/4 ounces cream cheese
  • 6 tablespoons canola oil
  • 2 eggs
  • 6 tablespoons 2% milk
  • 2 1/4 cups all purpose flour
  • 3 teaspoons baking powder
  • 2 apples (halved, cored, sliced)
  • 2/3 cup heavy cream
  • 1 cup sour cream
  • 1 teaspoon vanilla extract

    Directions

    1. Preheat oven to 350°F. Grease and flour a 10 inch loaf pan. Caramelize 2 tbsp sugar in a saucepan then add almonds and stir to coat. Transfer to a baking sheet lined with a silpat and set aside to harden. Break into small pieces.
    2. Mix together cream cheese, oil, eggs, milk, 1/3 cup sugar, flour and baking powder until smooth. Transfer 1/3 to prepared loaf pan. Top with 1/3 of apple slices and 1/3 of almond brittle. Repeat layers of dough, apple slices and almond brittle. Finish with remaining dough. Bake for about 35 mins then remove and let cool on a wire rack.
    3. Whip heavy cream to stiff peaks then fold into sour cream. Add 1 tbsp sugar and vanilla extract. Remove cake from pan, top with whipped cream then decorate with remaining apple slices and almond brittle.
