- 3 large eggs (at room temperature)
- 1 tsp. vanilla bean paste (or vanilla extract)
- 1 cup cinnamon applesauce (at room temperature)
- 1/2 cup all purpose flour (sifted)
- 1/2 cup heavy cream
- 780 grams Granny Smith apples (peeled, cored, and cut into 1-inch chunks)
- 1/4 cup lemon juice (from the lemon you zested earlier)
- 1/2 cup light brown sugar (packed)
- 4 Tbsp. cornstarch
- 1 1/2 tsp. ground cinnamon
- 1/2 tsp. ground ginger
- 1/2 tsp. ground nutmeg
- 1/4 tsp. kosher salt (optional)
- 3/4 cup streusel topping (without nuts)
- 1/2 cup caramel sauce (optional)
- 4 Tbsp. unsalted butter

- 3/4 cup chopped nuts (I recommend toasted pecans, walnuts, or almonds)
- 1/2 cup old-fashioned rolled oats
- 3/4 cup graham crackers (chopped, or any of the cookies you used to make the crust)
