In spite of poor previous review I decided to give it a try. The recipe needed just a bit of tweaking. With correct amount of baking soda, 0.5 tsp, as was mentioned in the guided directions and with double amount of apples, I used 6 medium, this cake turned out divine!!! Make sure you wait for cake to cool down completely. The apples release moisture into the batter when it cools. I also used 2 pie dishes, not a spring form, and baking took about 35 minutes. It tastes kind like a bread pudding, not a cake, absolutely delicious! Thank you, Natasha, for this recipe , keeping it in my favorites!

I didn't have a spring form pan so I used a sheet pan. I lined it with parchment. The appearance is the same in terms of fluffiness and consistency. However, I was disappointed in the taste. It needed salt in the batter which would have given it more flavor. Since there is no oil in this cake it tends to feel dry and coarse on the tongue although it appears moist.
