- 2 cups all-purpose flour
- 1/2 cup granulated sugar (I used cane sugar)
- 2 1/2 tsp. baking powder
- 1 1/2 tsp. cinnamon powder
- 1 tsp. apple pie spice (If you don't have apple pie spice, you can add a total 1tsp mix of cinnamon, nutmeg and all spice)
- 1/2 tsp. salt
- 1/2 cup unsalted butter (frozen and grated on a grater, I used a box grater)
- 1/2 cup full fat coconut milk (or heavy cream)
- 1 large egg
- 1 tsp. vanilla extract
- 1 3/4 cups Honeycrisp apple (packed finely chopped, I used 1 large apple)
- coarse sugar (for sprinkling on top before baking)
