- 2 Tbsp. spiced rum (or dark)
- 2 cups whole milk
- 4 large eggs
- 1 cup sugar
- 3 Tbsp. unsalted butter (melted and slightly cooled)
- 1/2 tsp. ground cinnamon
- 1/8 tsp. salt
- 1/2 tsp. vanilla
- 4 cups challah (packed, or brioche cubes, from one loaf with crust removed, you won't use entire loaf)
- 1 baking apple (large tart, such as Granny Smith, peeled, cored, cut into 1/8-inch slices and then cut in half)
- vanilla ice cream (for serving)

Yummy! Made a banana rum raisin bread pudding based on what I had in the cupboard. Subbed 1 1/4 cup reduced fat milk and 3/4 cup heavy cream for 2 cups whole milk. Used 3 ripe bananas instead of apples and used 3 eggs. Subbed 1/3 cup maple syrup for sugar. Cinnamon and vanilla extract were doubled. Topped bread pudding with syrup made of 1 banana and 1/4 cup maple syrup.
This would make a great autumn dessert!
