- 1/3 cup coconut oil (melted, preferably organic)
- 2 Tbsp. yacon syrup (or coconut nectar, or maple syrup would work, too, if you can have it)
- 20 drops vanilla (or plain, pure stevia liquid)
- 1 Tbsp. ground flax seeds (finely, about 1-1/2 tsp or 7.5 ml whole seeds if you grind yourself)
- 1/3 cup soy (plain or vanilla, almond or rice milk)
- 1 lemon
- 3/4 cup walnut pieces
- 1/2 cup almonds (natural, with skin)
- 1 cup rolled oats (old-fashioned whole, not quick cook or instant)
- 1/3 cup coconut flour
- 1 Tbsp. canela
- 1 tsp. ground ginger
- 1/4 tsp. cardamom (optional)
- 1/8 tsp. fine sea salt
- 2 cups pumpkin purée (canned or homemade unsweetened, sweet potato would make a great substitute here)
- 3 apples (medium sweet, peeled, cored and grated on large holes of a box grater)
- 2 Tbsp. lemon juice (freshly squeezed)
- 1 tsp. pure vanilla extract
- 30 drops vanilla (or plain, pure stevia liquid, to your taste, or 1/4 cup-1/3 cup, 60 ml-80 ml coconut nectar)
