- 1 cup dulce de leche (store-bought or homemade)
- 2 Tbsp. dark rum (such as The Kraken)
- 1/2 tsp. canela
- 1/4 tsp. chipotle powder (or cayenne, more or less to your taste)
- 1/2 tsp. salt (flaky, such as Maldon)
- 5 baking apples (large, tart, 2 pounds / 900 grams)
- 1/2 lemon (1-2 tablespoons)
- 2 Tbsp. heavy cream (or milk, for brushing edge of crust)
- 2 Tbsp. unsalted butter (in small pieces)
- 2 Tbsp. sugar
- sweetened whipped cream (barely, or vanilla ice cream, for serving)
